For the Carrot Cake:

20 oz cream cheddar (not light, not whipped), room temperature
1 glass margarine (2 sticks), room temperature
2 glasses powdered sugar (220g)
2 tablespoons lemon juice (20g)
1 teaspoon vanilla concentrate
toasted walnuts, hacked, for trimming, discretionary
50g marzipan, discretionary 

How to Make:

For the Carrot Cake: 
  1. Preheat the stove to 350˚F and line 24 biscuit tins with cupcake liners. 
  2. Filter together flour, preparing soft drink, heating powder, cinnamon and salt in a medium bowl and put aside.
